South Korea

South Korea is a country in East Asia, located on the southern portion of the Korean Peninsula. Its capital is Seoul. South Korea lies in a temperate climate region with a predominantly mountainous terrain. Its territory covers a total area of 38,375 square miles and has a population of 50 million people. Confucianism, shamanism (traditional spirit worship), Christianity, Buddhism and Chondokyo (Religion of the Heavenly Way) are the religions followed in South Korea. Korea divided into two political entities in 1948: North Korea and South Korea.

2 large Chinese (Napa) Cabbages
8.5 oz rock salt
Kimchi Sauce:
10 tbsp.fish sauce
10 tbsp. of red pepper powder
1 onion
4-5 cloves of garlic
1 Asian pear
1 tbsp of salt
1/2 tbsp of sugar
Pinch of ginger
4 spring onions

Cut the cabbage into chunks, then soak in plenty of water with about 6.5 oz of salt. Leave this to soak for about 4-5 hours.

To create the sauce put all the ingredients in a blender except the spring onions, blend until quite fine. Slice the spring onions into chunks then add to the mixture.

After the cabbage has soaked, drain the water. Rinse the cabbage in cold water, then drain again. Add the Kimchi sauce and mix by hand.

Add additional salt to taste and store the Kimchi in jars. You can eat it straight away, but kept in the fridge the taste will improve as it ferments. The Kimchi will keep for at least 6 months.
